1 3/4 c. all-purpose flour
2 1/2 t. baking powder
1/2 t. salt
1 1/2 T. sugar
2 egg yolk, beaten
2 egg whites, stiffly beaten
1 1/4 c, milk
2 T. oil
2 apples, peeled and grated
Mix together flour, baking powder, salt and sugar. Combine yolks, milk and oil. Add to dry ingredients,
Add apples. Fold in egg whites. Add to dry ingredients. Bake in a waffle iron. Makes 4 cups batter.
This evening we set the picnic table and I served these with bacon and big jugs of milk. We watched the birds begin the long journey south and smelled the neighbors fresh mown grass. There is such a feeling of contentment and comfort. The long hot summer is nearing its end.
