Orange Sherbert

November


1 c. evaporated milk
1 8oz. can frozen orange juice
red and yellow food colors
1/3 c. sugar

Pour milk into a freezer tray until crystals form around edges. In a small bowl, whip frozen milk until soft peaks form. Beat in orange juice and sugar. Tint with food colors. Turn back into freezer tray and freeze 2 hours serving.

Cheesy Popcorn

2 qts. popped corn
1/2 c. oleo, melted
1/2 c. Parmesan cheese
1/2 c. grated dried American cheese

Spread popcorn on a flat pan. Add cheeses to the melted oleo and pour over popcorn.

This recipe keeps "unwanted" pests out of the kitchen during holiday baking. My family is always grabbing goodies off the table, so I keep them busy with this.

Marshmallows: Dip marshmallows in water and roast them  while wet and the inside will melt and the outside won't blacken.

The rate at which a person can mature is directly proportional to the embarrassment he can tolerate.,,

Tex- Mex Burgers

1 1/2 lb. ground beef
1/2 c. corn chips, crushed
3/4 c. barbecue sauce
2 T. celery, diced
1 T. bell pepper
2 T. onion, diced
6 tortillas
oil
1/4 lb. processed cheese spread

Combine meat chips and half of the barbecue sauce. shape into 6 patties. Combine remaining bbq sauce and veggies. Fry each tortilla in 1/4" oil until golden brown and crisp, turning once. Prepare patties as you choose. I broiled mine. Place cheese on top of pattie and let melt. For each burger, top tortilla with a pattie, then bbq sauce mixture. Serves 6

Pumpkin Bread

November 10, 1990



1 c. brown  sugar
1/2 c. sugar
1 c. canned pumpkin
1/2 c.salad oil
2 eggs, beaten
2 c. all-purpose flour
1 t. baking soda
1/2 t. each: salt, nutmeg, cinnamon
1 c. raisins
1/4 t. ginger
1/2 c, chopped nuts
1/4 c. water

Combine sugars, pumpkin, oil and eggs.Beat until well blended. Add dry ingredients and mix well.
Stir in raisins, nuts and water. Spoon inti a greased 9" x 5" x 3" loaf pan. Bake 65 minutes at 350*.
Cool. This is best if allowed to stand overnight.

This recipe has been declared to be served at every holiday get together with family.

Magic-Poo Meatballs

November 4, 1992


1 lb. ground beef
1 envelope onion soup mix
1/2 c. cooked white rice
Sauce: 1 c.catsup. 1/2 c. grape jelly, 1.2 t. lemon juice, dash cloves, mixed well.

Heat sauce ingredients Combine meatball ingredients. Brown in skillet, drain, and arrange 50 tiny balls in a baking pan. Pour sauce over meatballs. Bake 30 minutes at 375*.

My toddler, Devin, loves these and I served spinach on the side. We are watching Winnie-the-Pooh on tv,
being happy and preparing my yard for our first frost warning.

Ham Fettuccine

November 24, 1992


1 lb. ham, sliced in finger strips
1 T. olive oil
1 medium zucchini, cut in strips
1 bell pepper, cut in strips
1 t. oregano
1 t. garlic powder
12oz. fettuccine. uncooked
2/3 c. half n half
1/3 c. fresh basil leaves or 1 big spoon of dried
2 T. Parmesan cheese

In skillet, heat oil over medium high heat. Stir in zucchini, bell pepper, oregano and garlic. Cook until tender. Cook pasta according to package directions. Drain and return to pan. Add ham and heat on lo for 3 minutes. Add remaining ingredients and toss. Serves 5

Mock Quiche

November 29, 1995


2 T. oleo
1 c. boiled potatoes, chopped
6 eggs, slightly beaten
1/2 c. Parmesan cheese
6 strips bacon, cook and crumbled
1/4 c. green onions, chopped
1/4 c. milk
salt / pepper

Melt oleo in a 10" oven proof skillet or casserole. Combine ingredients, pour into skillet. Bake at 350* for
20 minutes. Add extra cheese if desired.

It's 55* and took Devin on a nature trail. This evening, she concluded the red lights on top of tall buildings are places for Rudolph and the reindeer to fly to.

Sante Fe Bake

November 2. 1990


2 eggs, beaten
1 c. cottage cheese, creamy style
1/2 c. sour cream
1/3 c. green chilies, drained, chopped
3 T. flour
3 T. milk
3 t. sugar
1 1/2 t. onion salt or powder
pepper
1 15oz. can whole kernel corn, drained
3 T. ripe olives, chopped
1/4 c. cheddar cheese, shredded

Preheat oven to 350*. In a large bowl, combine eggs and cottage cheese, blend well. Add sour cream and chilies, mix well. In a small bowl, combine flour and milk, blend until smooth. Stir in sugar and seasonings and corn. Blend well. Pour into an ungreased 8" casserole and bake 40 minutes  or until toothpick clean. Sprinkle top with olives and cheddar cheese and let melt. Serves 6.

Beggin' Sghetti

November


1/4 lb. fresh mushrooms, sliced
1 carrot, sliced
1 T. garlic powder
1/2 c. each: onion, celery, bell pepper, chopped
2 T.  oil
3/4 lb. Italian sausages, cases removed
2 15oz. cans tomato sauce
1 T. sugar
1/2 t. Italian seasoning
5 servings of cooked spaghetti.

Saute veggies in oil in a dutch oven. Add sausage and cook until meat looses redness. Drain fat and add remaining ingredients. Simmer, uncovered 40 minutes, stirring occasionally. Serve over hot spaghetti.

My family loves this. If I ask what's for dinner, they request it. We grew a lot of our veggies and I let my girls get dirty and muddy in the garden and each one got to plant seeds and watch them grow. As we sat the table, they were so proud to eat what they sowed

Take a tub of frosting and melt it in the microwave. You will have a fondue so good for cake or pretzels or whatever. I see a lot of fondue pots at yard sales

Brownies

November 25, 1990


2 sqs. unsweetened chocolate
1 stick oleo
1 c. brown sugar, packed
2 eggs
1/2 c. all-purpose flour
1 c. walnuts, chopped

Melt chocolate over lo heat. Cream together oleo and sugar. Add eggs, one at a time, beating well after each addition. Stir in chocolate, then flour. Fold in nuts. Pour into a greased brownie pan. Bake 25 minutes at 325*. Cool. Makes 24 bars.

Family Night Sandwiches

November 8, 1995


1 1/2 c. cabbage, shredded
coleslaw dressing
4 slices dark rye bread
red onion rings
tomato slices
8 slices cheese
1/2 lb. roast beef from deli

Combine cabbage with enough coleslaw dressing to moisten. For each sandwich, cover 1 slice bread with cabbage mixture, tomato, onion. 1 slice cheese, then slice of bread. Place on an ungreased cookie sheet and broil 2 minutes. Cut diagonally. serves 4

Chicken Breasts Salsa

November 16, 1994

1/2 c. salad dressing
1/2 c. ranch salad dressing
1/4. red pepper flakes--or 1 pack from a delivery pizza
6 chicken breasts, boneless, skinless
salsa

Mix dressings and pepper flakes. Spread over chicken. Cover and chill 30 minutes. Place chicken over medium coals. Grill, uncovered 10 minutes on each side or until fork tender. Serves 6

So sad today. A local teen girl was killed at school during a fight. Bad decisions for no reason. My theory is if a parent was in the home at all times, our children would be more stable, but nope.

Breaded Fish

November

1 lb. fish filets, thawed
salt
lemon pepper
1/2 c. dry bread crumbs
1 egg
1/4 c. oleo

Rinse fish, pat dry. Sprinkle with seasonings, roll in crumbs. Brown oleo in skillet. Add fish and saute about 40 minutes or until fish flakes easily.Serves 2

Potato Flake Pancakes

November 25, 1990


1 1/2 c, biscuit mix
3/4 c. instant mashed potatoes
dash salt
1 1/2 T. sugar
1 1/2 t. baking soda
2 eggs
3 T. oil
1 1/2 c. buttermilk
1/2 c. milk

Mix milks together. Blend in remaining ingredients. Hear griddle or skillet. Pour 1/2 cup batter into the lightly greased pan. When edges are dry, flip and brown the other side. Makes 12 pancakes

Darn Goods

November

1 10count tube biscuits, regular flavor
melted shortening
1 c. cinnamon sugar or powdered sugar

In a medium saucepan, melt shortening, 1/3 pan . Cut each biscuit into 4 pieces. Place 5 pieces each at a time and fry about 2 minutes on each side. Drain on paper towels and roll in sugar. Makes 40

Tyler Texas Steak Sauce

November 1, 1990

1/2 c. oleo
1/3 c. lemon juice
2 T. Worcestershire sauce
1 clove garlic, minced
salt / pepper
3/4 t. dry mustard
2 drops hot pepper sauce

In a small pan, combine ingredients. Heat, stirring until oleo melts.

This recipe can be used very well for game such as rattlesnake, o'possum .
When I stayed in Tyler, Tx, I learned to eat poke weed. I love you Tyler, Texas

Poker Night Beans

October 26, 1994


1 lb. dry pinto beans
6 lb. beef rump roast
1 T. shortening
1 c. banana peppers
2 c. tomato juice
1 8oz. can tomato sauce
1/2 c. water
2 T. cider vinegar
2 T. brown sugar
2 1/2 t. salt
1 t. each: dry mustard and thyme
dash onion salt

Wash beans, cover and soak overnight. Bring beans to a boil and cook 1 hour, drain, discard water. Brown roast in a roaster in shortening. Add peppers and cook 2 minutes. Add beans and remaining ingredients. Cover and bake 3 hours at 350* until meat and beans are done. Serves 10.

Silver Stake Ka-Bobs

October 8, 1979


1 boneless beef sirloin steak, about 1 1/2lbs., cut into thin strips
1 medium zucchini, cut into 1" pieces
1 medium yellow squash, diagonally sliced
2 small onions, quartered
12 cherry tomatoes
1/2 c. salad dressing
1/2 c. plain yogurt
1/4 c. lemon juice
dash garlic powder
1/2 t. each: ground cumin-parsley flakes-and ground coriander
dash black pepper, coarse grind if you have it

Thread steak strips between veggies onto 6 skewers. Mix salad dressing and remaining ingredients into small bowl, reserving 1/2 cup. Place ka-bobs in broiler or outside over hot coals, brushing with reserved mixture. Cook until meat is done, about 13 minutes, turning once.

Vampire Sauce for Shrimp

October

1 c. chili sauce
1 T. horseradish
1/2 t. grated lemon peel
1/4 t. salt
dash hot pepper sauce

Mix well and chill. Serve after dark:)

Ghoul Bread

October 25, 1990


1 pkg. hot roll mix
3/4 c. warm water
1/2 c. sour cream
1 egg
1 small can french fried onions

In a large mixing bowl, dissolve yeast from hot roll mix in the warm water. Stir in sour cream and egg. Add the flour mix and onions. Cover and let rise in a warmplace 45 minutes or
until double in size. Generously grease a 1 1/2 qt. casserold. Stir down dough and place in the casserole and let rise another 40 minutes or until doubled. Bake in a preheated 375* oven for 30 minutes or deep brown. Remove from pan at once.

Yippee! Realtor called me at work today and approved the loan for my new house. Life is good.

A Royal Beef

October

1 lb. round steak, cut into strips
2 T. all-purpose flour
1 t. salt
1/2 t. pepper
1/4 c. oleo
1 c. onions, chopped
1/4 c. beef broth
1/2 c. sour cream
1 large can spaghetti sauce with mushrooms

Mix flour with seasoning to coat meat. Melt oleo in a large skillet and cook onions 2 minutes. Add meat and brown. Add broth and spaghetti sauce. Cover and cook over lo heat 20 minutes. Remove from heat and stir in sour cream. Serve hot. Serves 5

Orange Sticky Hands

October 4, 1993


1 1/4 c. milk
1/2 c. oleo
3 1/2 c. all-purpose flour
1/3 c. sugar
1 t. salt
1 T. grated orange peel
1 pkg. dry yeast
1 egg
topping: 1/4 c. packed brown sugar, 1 small box vanilla pudding mix (not instant), 2 T. oleo, 2 T. corn syrup, 1 T. orange juice. Mix well and heat.

In a small saucepan, heat milk and oleo until very warm. Lightly spoon flour into measuring cup, level off.
 In a large bowl, combine warm milk mixture, 2 c. of the flour, sugar, salt, orange peel, yeast and egg.
Beat 3 minutes at medium speed. By hand, stir in remaining flour. Cover and let rise 1 hour. grease 24 muffin cups. Place heated topping 1 t. at a time in muffin cups. Stir down dough. Let rise 30 more minutes. Drop batter by tablespoons in each cup. Bake at 375* for 30 minutes Makes 24 fingers.

Ghostly Pecan Coffee Cake

October 20, 1980

1 pkg. hot roll mix
2/3 c. warm water
1/4 c. sugar
1/2 c. sour cream
1/4 c. oleo, melted
1 t. rum extract
1/2 pecans, chopped
1/3 c. brown sugar
1 t. cinnamon
Glaze: Combine together 1 c. sifted powdered sugar, 1 1/2 T. milk ,2 t. softened oleo, 1/4 t. rum extract and 3 t. chopped nuts

Grease a 9" spring form pan or a 10" bundt pan. In a large bowl, dissolve yeast from the hot roll mix in water. Stir in sugar, sour cream. oleo, egg and rum extract. Spoon half of batter into pan. Combine pecans. brown sugar and cinnamon. Sprinkle over batter. Cover and let rise until doubled, about an hour. Preheat oven to 375*. Bake 35 minutes or until golden brown. Cool, turn upright and drizzle on glaze.

Jack O' Lantern Pie

October 17, 1995


1 9" unbaked pie shell
2 eggs, beaten
1 16oz. can pumpkin
1/2 c. sugar
1.4 c. brown sugar, packed
2 t. apple pie spice
1/4 t. salt
1/8 t. cinnamon
1 c. milk
2/3 c. evaporated milk

Combine eggs and pumpkin. Blend in sugar and spices. Add milks, mix well. Pour into pie shell. Bake 50 minutes at 400*. or until toothpick clean.

About grilled corn on the cob: Pull back husks from the base. Soak in water for 10 minutes, drain. Grill 20 minutes, turning occasionally. Recycle cobs, lol

Cucumber Witches

October 15, 1993


2 1/2 c. sharp cheddar cheese, shredded
1 8oz. pkg. cream cheese
1 clove garlic, minced
1/4 c. raspberry jelly or preserves
2 cucumber, unpeeled
dry bread crumbs

With mixer, beat cheeses and garlic until fluffy or cackles like a witch. Divide mixture in half and place on foil.
Lightly dollop jelly on cheese to obtain a marble look. Shape each half to a log about as wide as the cucumbers. Wrap and chill overnight. Just before serving, unwrap logs and roll in bread crumbs. Slice logs to 1/4" thick  rounds. Form sandwiches between cucumber slices. Makes 4 1/2 dozen.

Cream of Werewolf Cubcakes

October 22, 1992


1/3 c. brown sugar, firmly packed
3 T. oleo
1 c. walnut pieces
1/4 t. cinnamon
1 1/2 c. flour
1 small box vanilla pudding and pie mix
dash salt
1/3 c. oleo, softened
1 egg
1 1/4 c. milk
1 t. baking powder

In a small bowl, combine brown sugar and 3 T. oleo until crumbly. Stir in cinnamon and walnuts. Set aside.
Combine flour, pudding mix, baking powder and salt. Set this aside also. In another mixing bowl, cream together 1/3 c. oleo and sugar. Beat in egg. Add dry ingredients alternately with milk. Mix thouroughly.
Spoon batter into paper muffin cups half full. Sprinkle each cup with walnuts. Bake 20 minuttes at 375*. Cool slightly,,,This will make your group howl for more!


To make werewolf cream dip for cubcakes, use chocolate milk instead of white with a whipped topping mix.

Buttered Crow Pie

October 3, 1990

1 small box butterscotch pie and pudding mix
2 c. milk
1/2 c. pecans, chopped (crows beaks)
1 baked 8" pie shell
1 c. whipped topping

Prepare pudding mix as directed on box for pie. Cool 5 minutes, stirring once. Add pecans. Pour into pie shell and chill 4 hours. Before serving, add topping.

Giant Ogre Cookies

October 5, 1987


2 c. raisin bran cereal
1 c. whole wheat flour
1 c. all-purpose flour
1 t. baking soda
3/4 c. butter flavored shortening
2/3 c. sugar
1/2 c. brown sugar, packed
2 eggs

Stir together cereal, flours and soda, set aside. In mixing bowl, beat sugars and eggs until fluffy. Beat well. Add flour mixture and blend well. drop by 1/4 c. measures onto an ungreased cookie sheet. Bake at 325* for 12 minutes or until cookies are lightly browned. Makes 16.

Lemon Pie Deluxe

October 13, 1994


1 graham cracker crust
1 1/3 c. sugar
1/3 c. cornstarch
1/2 t. salt
1 1/2 c. hot water
1/3 c. lemon juice
2 eggs, separated
1 t. lemon peel, grated
1 t. vanilla
1 envelope unflavored gelatin
1/4 c. cold water
1 tub whipped topping
2 T. oleo

In saucepan, combine sugar, cornstarch and salt. stir in hot water and lemon juice. Over medium heat, stir until thickened and mixture mounds. Remove from heat. Add small amounts of egg yolk. Stir in 2 T. of oleo until melted, then add lemon peel and vanilla. Measure out 1 cup of mixture for glaze later on. Soften gelatin in cold water for 1 minute. Add gelatin to hot mixture, stirring until dissolved. Chill 30 minutes. Beat egg whites until stiff, then fold into mixture with 1 cup of the whipped topping. Pour into crust, spoon on glaze and chill overnight.


Whole Wheat Molasses Bread

October 11, 1995


Using a bread machine:

3/4 c. warm water
1 T. oil
2 T. molasses
1 3/4 c. bread flour
1/2 c. whole wheat flour
1 1/2 t. bread machine yeast
2/3 c. raisins or 1/2 c. mincemeat

Place ingredients in bread pan according to your instructions. Use medium settings and add raisins according to your directions.

Today I attended a group to help gang members get out and help them lift up. I brought this delicious bread to offer and to "break" bread "Let Us Rise Together". It doesn't matter what color or race a person is, it is what flavor of jam do you like on your bread.

Mincemeat: Is a combination of apples, raisins, spices, nuts and with or without rum.

Black Cats and Dogs

1 pkg, hot dogs
1 15oz. can chili beans
8 slices American cheese
12 strips bacon

Split dogs lengthwise but do not cut through. Cut cheese into julienne strips and place into hot dogs. Stuff beans in. Wrap bacon around hot dogs and secure with toothpicks. Wrap in heavy aluminum foil. Bake or broil inside or out. Serve hot. Serves 4

The leaves are falling and everything is red and orange and yellow. Nice!

Mexican Spoon Bread

October 13, 1993


1/2 c. oleo
1 can condensed cheese soup
1 8oz. carton plain yogurt
3/4 c. cornmeal
2 t. baking soda
2 110z. cans whole kernel corn, mexican style, drained
2 eggs, slightly beaten

In a 10" oven proof skillet, combine oleo, soup and yogurt, blend until smooth. Stir in corn. Stir in cornmeal, baking powder and eggs, blend well. Bake 1 hour at 350  or until toothpick clean. Serves 8

This is so good with a salad and a bowl of beans, watching Wonder Years and gazing out at a beautiful sunset. I love the Earth.

Mix cornmeal, rye, graham, oat or bran meals by sifting onto flour as the nutrients are in the husks or coats.

Jean P's Sheet Cake

October

2 c. all-purpose flour
2 c. sugar
1 stick oleo
1/2 c. shortening
4 T. cocoa
1 c. water
1/2 c. buttermilk
1 t. vanilla
1 t. cinnamon
1 t. baking powder
1 1/2 t. salt
frosting to pour over hot cake:
 1 stick oleo, 5 T. milk,4 T. oleo, boil 1 minute. Add 1 box powdered sugar, sifted and 1/2 t. cinnamon

In a bowl, combine flour and sugar. Set aside. Bring to boil, oleo, shortening, cocoa, and water. Pour over flour. Add remaining ingredients, mix well. Bake 20 minutes at 400* in a greased sheet cake pan..I used a 11" x 9" pan. Pour hot frosting over cake.

My cousin, Jean Pinaire (RIP), wife of Kenton Pinaire, served this at one of many dinners at Grandma
Schiefelbein's house. I loved it then, I love it now.

Broom Stick Pie

October 22, 1994

1 pie crust, any kind, ready to eat
1 envelope unflavored gelatin
1 1/2 t. pumpkin pie spice
1 14oz. can sweetened condensed milk
2 eggs, well beaten
1 16oz. can pumpkin
1/2 t. salt

In a medium saucepan, combine gelatin,salt and pie spice. Stir in milk and eggs, mixing well. Let stand one minute. Cook and stir over lo heat until gelatin is dissolved and mixture slightly thickens., about 8 minutes.
Remove from heat and stir in pumpkin until well mixed. Pour into crust. Chill 4 hours or until set.
Garnish with candy broomsticks etc.

A peaceful Saturday morning. Fresh coffee, sunshine and the house is ready for Halloween. Devin is watching Free Willy cartoons as I make this for dinner.


Chicken Butts

October 6. 1995


1 loaf  frozen bread, thawed
2 c. chicken, cooked, cubed
salt / pepper
3/4 t. basil
1 c. mushrooms, sliced
1/2 t. thyme
1/4 t. oregano
1/2 c. mozzarella cheese, grated

Roll the dough into a rectangle. Using a ruler, start at the top of the rectangle and every 1 3/4", make an indention. Combine ingredients except cheese. Spread filling down center of braid. Using a serrated knife, cut at markings, but do not cut through. Begin  braiding by folding top and bottom rows left over right. Continue until finished. With both hands, transfer braid onto a greased cookie sheet. Cover and let rise 40 minutes. Bake 20 minutes at 350*. Remove from oven and sprinkle cheese on. Bake 8 minutes longer.
Serves 6

Quick Cheese Bread

October


1 egg
3 1.2 c. baking and biscuit mix
1 1/2 c. milk
1 c. instant milk powder
1 c. cheddar cheese, shredded

Mix ingredients together and beat 1 minute. Pour into a greased loaf pan and bake 1 hour at 350* or until done.

On garden vegetables:
For veggies grown in the ground, cover with cold water and cover with a lid to cook.
For veggies grown above the ground, cook in hot water and leave pot uncovered.
Artichokes, brussels sprouts, broccoli, and cauliflower must be soaked in water to remove dust and insects.

Goblin Grillers

October

1 10oz. pkg. frozen mixed vegetables
1 T. oleo
1/2 t. hickory salt
pepper

Place frozen veggies on a sheet of heavy duty aluminum foil. Top with oleo and seasonings. Seal and grill over hot coals, about 30 minutes, turning only 3 times during cooking. Serves 3

Cheddar Corn Chowder

October

2 cans condensed cheddar cheese soup
1 soup can water
1 soup can milk
1 8oz. can cream style corn
1/4 c. frogs eyes (green peppers)

In a large saucepan, combine ingredients and simmer 5 minutes.
I served this with hamburgers:

Cover a cooked hamburger patty with waxed paper and using a Halloween cookie cutter, shape as desired.

Shot Gun Wedding Punch

2 qts ginger ale
1 qt. lemonade
1 pt. cranberry juice cocktail
2 limes, sliced

Mix and chill.

I filled latex gloves with water, tied the ends, placed on a cookie sheet sprinkled with corn meal and had frozen hands to float in this punch.

We usually see only the things we are looking for so that we sometimes see them where they are not.

Brains After Drugs Salad

October

1 small box lime gelatin
1 c. boiling water
1 can crushed pineapple
1 c. cottage cheese

Dissolve gelatin in boiling water.
Drain pineapple, reserving liquid. Add to gelatin. Chill until it starts to set, whip with electric mixer  until double in bulk. Add fruit and cottage cheese. Place into a Halloween gelatin mold and chill until serving.

I have Rose Moss growing like crazy. Sometimes my soul rejoices over simplicity.
Halloween is a big month of fun for my family.

Flank Steak- He Man Style

October 7, 1979 6: 00 p.m.  Sunday


1/2 c. Catalina style french dressing
2 T. lime juice
1 T. honey
2 t. lime peel, grated
1 T. garlic powder
1 beef flank steak, 1 lb.

Mix dressing, lime juice, honey, lime peel and garlic. Pour over steak and chill overnight or all day, turning occasionally. Drain and discard liquid. Broil indoors 6 minutes on each side or outdoors over medium coals.
With knife, cut at a slanted angle across the grain into thin slices. Serves 4.

Excuses are the nails used to build a house of failures.

Barbecued Quesadilla

September 9, 1995

1/2 c. tomatoes, chopped
1/3 c. barbecue sauce, original flavor
2/3 c. green onion, chopped
1 T. red wine vinegar
1 squat can green chilies, diced
2 c. Monterey jack cheese, shredded
8 7" round flour tortillas

Combine tomatoes with bbq sauce, 1 T. of the green onion, vinegar and chilies. Add a dash of salt if desired.
Combine cheese with the remaining onions. For each quesadilla, sprinkle 2 T. of the sauce mixture over 1/2 c. cheese. Top with another tortilla., pressing gently. Fry in a skillet with a little oil until cheese is melted, turning only once. Cut each into 6 serving wedges. 10 servings.

Struesel Cake

September 26, 1987


2 c. graham crackers, ground
3/4 c. nuts, chopped
3.4 c. brown sugar, packed
1 1/2 t. cinnamon
3/4 c. oleo, melted
1 box yellow cake mix
1 c. water
1/3 c. oil
3 eggs
Powdered sugar glaze

Grease and flour a 13" x 9" x 2" pan. Mix graham crackers sugar, cinnamon and oleo., set aside. Beat dry cake mix, water, oil and eggs for 3 minutes. Pour 2 1//4 c. of the batter into pan, sprinkle with crumb mixture. Pour remaining batter into the pan, then the remaining crumbs. Bake at 350* for 45 minutes or until toothpick clean.
Glaze: Pour on hot cake:
Mix 1 c. sifted powdered sugar and 1 T. water. Add water a few drops at a time as needed.

On whipped butter: Don't use whipped butter products in recipes. It contains more moisture and air and will not measure correctly.

Banana Nut Bread

September 17, 1990

2 c. all-purpose flour
2 t. baking powder
1/2 t. baking soda
1/2 t. salt
1/2 c. walnuts, chopped
1 egg
3/4 c. brown sugar, packed
1 t. vinegar
1/2 c. evaporated milk
1 c. mashed bananas
1/4 c. oleo, melted

Mix dry ingredients. Beat egg. Add sugar and beat until fluffy.  Add vinegar to milk and add to egg mixture.
Add banana and oleo to dry ingredients and stir until just moistened. Pour batter into a buttered 8 1/2" x 4 1/2" x 2 1/2" loaf pan. Bake 1 hour at 350*.. Bread is best after siting 24 hours so hide it.

My daughter Debbie and I are enjoying this, watching Ferris Bueller. It has finally cooled to a nice 74*outside.

1/2 c. apple, chopped
2 T. walnuts, chopped
dash cinnamon
1 8count tube crescent dinner rolls
1 can spray cheese, any flavor

Lay rolls out according to package directions. Combine ingredients and spoon mixture over rolls and press in . Bake according to directions. Serves 8

Being a delightful sunny day, we went to my dad's and picked apples, came home and I fixed this for the football game. It's hard to believe summer is over when it's 85* out here.

Top O' Line Brownies

1 c. sugar
2 T. oleo
1 egg
1 t. vanilla
2 sq's. unsweetened chocolate, melted
1 c. all-purpose flour
1 t. baking powder
1 c. walnuts, chopped
powdered sugar for dusting

Blend sugar, oleo, egg and vanilla until fluffy. Add chocolate. Mix flour and baking powder. Add alternately with milk. Stir in walnuts. Blend well. Bake 30 minutes in a buttered pan at 350*. Dust with powdered sugar. Makes 2 dozen.

Hurray! It'sTuesday. All my windows are open for fresh air at 76* this morning. I'm ready to watch "Top Cop" and eat some brownies.

Another Lasagna

September 13, 1987

1 8oz. pkg. lasagna noodles
1 lb. ground beef
1 can sloppy joe sauce
2 t. garlic powder
1/2 t. basil
1 t. oregano
1/4. salt
3/4 c. cottage cheese
1/4 c. parmesan cheese, grated
1 t. dried parsley
1 lb. mozzarella cheese
 1/2 c. water

Prepare pasta according to directions on package. Lightly brown meat, drain. Stir in sloppy joe sauce. water, basil and salt. Simmer 15 minutes. Combine cottage cheese, parsly, oregano and garlic. Place half of the pasta in a 2 qt. casserole dish and half of the mozzarella cheese. Add half of the meat. Repeat layers. Bake 30 minutes at 350*. Let stand 10 minutes before cutting. Serves 8

911 Treats

September 15, 1993
 IN MEMORY OF THIS DAY MAY 1, 2011

4 c. chocolate rice cereal
1 6oz. bag chocolate chips
1 1/2 c. walnuts, chopped
1 c. coconut, flaked
1/4 c. oleo
1 10oz. pkg. marshmallows
1 t. vanilla

Butter a 13" x 9" x 2" pan. In a large bowl, combine cereal, chocolate chips, nuts and coconut. In a large saucepan over medium heat, melt oleo and marshmallows, stirring constantly. Stir in vanilla. Remove from heat. With a wooden spoon, stir in cereal mixture. Turn into pan and press down gently with the back of a metal spoon. Cool 1 hour. Best cut with a pizza cutter.

Lime Dream Pie

1 graham cracker pie crust
1 6oz, can frozen lime-ade, thawed
1 140z. can sweetened condensed milk
1 1oz. square semi sweet chocolate, melted
2 c. whipped cream

In mixing bowl, beat lime-ade, milk and chocolate. Mix thoroughly. Fold in whipped cream gently. Pour into crust and chill until serving

Fall is setting in with a low of 48*. We are living in Newton, Ks and own JJ's Videos. Our house is like a mansion.

Golden Pot of Soup

September


1 1/2 c. stew beef
1/3 c. onions, chopped
2 T. oleo
1 can golden mushroom soup
1 1/2 soup can water
1 can any beef based soup
1 can tomatoes, chopped
1 can green beans, drained
1 can mixed vegetables, drained

In a dutch oven, brown beef with onions until done, drain. Add remaining ingredients. Cover and simmer 20 minutes. Serves 8

Bruschetta Bread

September 1, 1993

1 small loaf Italian bread, sliced lengthwise
2 T. garlic spread, your choice
1 tomato, sliced, seeded
1 1/2. basil
1 t. Italian seasoning
1 T. olive oil

With cut side up, brush bread halved with olive oil. Spread on garlic spread. Top with tomato and seasonings. Broil 6" from heat 1 minute. Slice in strips and serve. Serves 6

Florida Peach Dessert

September 1, 1993


1 16oz. can peach slices, drained
1 small box instant pistachio pudding mix
2 c. milk
1 spray can whipped cream
6 maraschino cherries

Prepare pudding and chill 15 minutes. Set aside 6 peach slices for garnish. and chop remaining slices. To form parfaits, just before serving, spoon a layer of pudding into 6 dessert dishes. Top each with a layer of chopped peaches, then whipped cream, then pudding. Garnish each with a peach and a cherry. Serves 6.

Molasses Crunch

September 23, 1985


2 qts. popped corn
2 c. peanut halves
1 1/3 c. molasses
1 c. sugar
2 T. oleo
1 T. vinegar
2/3 c. water
1/4 t. baking soda
1 t. vanilla

Preheat oven to 250*. Combine popped corn and peanuts in a large 4" deep pan. Keep warm in oven.
Butter 2 8" square pans. Mix mo;asses, sugar, oleo, vinegar and water. Cook slowly, without stirring, until candy reaches 250* or hard stage. Add soda, stir well. Remove from heat, quickly stir in vanilla. Pour syrup over popcorn. Pour into pans. Cut when cooled. Makes 24 squares

Chinese Chicken Salad

September 1, 1993


1/4 c. soy sauce
2 t. mustard
1 T. oil
2 1/2 c. cooked chicken chunks
2 1/2 c. cooked white rice, cooled
1/4 c. green onion, chopped
1/2 c. celery
1/4 c. green bell pepper, chopped
2 boiled eggs, sliced
3/4 c. salad dressing
1 3oz. can chow mien noodles
Iceberg lettuce

Blend soy sauce, mustard and oil. Add chicken and toss. Let stand in fridge 30 minutes. Stir in rice, vegetables, eggs and salad dressing. Spoon over dinner plates cover with a bed of lettuce. Top with noodles.


Back Pack Meatballs

September 22, 1993


1 lb. loaf any bread, uncut
I chose an Italian loaf baked in my bread machine
1 lb. any meatballs

Slice loaf in half lengthwise. Scrape out a hollow on each half, saving the bread to feed critters on the journey.
Fill the bottom half with meatballs and top with the other half. Warm in oven at 350* for 20 minutes. Wrap in 3 layers of foil and 2 layers of newspapers before adding to back pack. Serves 4

We hiked through Chisholm Creek Park and stopped to eat in the picnic area and went insect searching.
Little kids love to do that. We fed the birds the bread and collected 14 different insect species.

Tortilla Stack

September 13. 1982


2 lbs. ground beef
1 large onion, chopped
1 T. shortening
salt / pepper
1/2 t. garlic powder
1/2 t. cumin
1 10oz. cans mild enchilada sauce
12 flour tortillas
1/2 lb. cheddar cheese, grated

Brown beef and onions. Add seasonings and enchilada sauce. Simmer 30 minutes. Arrange alternate layers of tortillas, meat and cheese in a 9" x 13" pan. Bake 35 minutes at 350*

Serves 6

Squash Salad With Cabbage

September 12, 1994

1/2 lb. yellow crooked neck squash
2 tomatoes
1/3 c. broccoli stems
1 leek
3 T. buttermilk
1/2 t. Dijon mustard
2 t. basil leaves
4 large cabbage leaves, red or green
parsley for garnish

Peel and cut squash into julienne strips. In a medium saucepan, steam squash until tender. Cut the tomato into chunks. Peel broccoli, remove top off leek and cut both into julienne strips. In a small bowl, whisk buttermilk, mustard and spices. Place cabbage on a platter and spoon squash mixture on cabbage, add broccoli mixture over leaves. Garnish. Serves 4

Hot Diggity

September 9. 1982


1 bag rice, ready to cook
1 pkg. frankfurters
1/2 c. onion, chopped
1/2 c. catsup
1/4 c. hot dog relish
1 T. mustard
1 c. American cheese. shredded

Cook rice according to directions, drain. In a 10" skillet, saute meat and onion until tender. Stir remaining ingredients. Add cheese and blend slightly Serves 4

Chocolate Souffle

September 6, 1992


!/2 c. sugar
2 T. cornstarch
1 c. milk
2 squares 1oz. each, unsweetened chocolate
3 egg yolks
2 T. oleo, softened
1 t. vanilla
4 egg whites
1/2 t. salt
1/4 t. cream of tartar

Blend sugar and cornstarch in a small saucepan. Gradually stir in milk, add chocolate. Cook over medium heat, stirring constantly until chocolate is melted and mixture thickens and boils. Boil and stir 1 minute.
Remove from heat. In a small mixing bowl, beat yolks until thick and lemony. Gradually beat in chocolate mixture. Stir in oleo and vanilla.Cool to room temperature. Preheat oven to 350*. Butter a 2 qt. casserole and sprinkle sugar lightly over oleo. In a large mixing bowl, beat egg whites, salt and cream of tartar until
stiff peaked. Stir about 1/4 c. of the meringue into chocolate. Carefully fold in the rest of meringue.
 Gently pour into casserole. Bake 50 minutes or until it is toothpick clean. Serve.

Maple Cream Pastry

September 7, 1991



1 c. brown sugar, packed
1/2 c. chopped mixed nuts
1/3 c. maple flavored pancake syrup
1/4 c. oleo
1 8oz. pkg. cream cheese, softened
1/4 c. powdered sugar
1/2 c. coconut
1 10oz. tubes biscuits

In an ungreased 13" x 9" baking pan, combine brown sugar, nuts, syrup and oleo. Blend cream cheese,
powdered sugar and 2 T. oleo until smooth. Stir in coconut. Separate biscuits into 20 pieces. Press each into a 4" circle. Spoon 1 t. of the cream cheese mixture onto middle of each biscuit. Overlap dough to seal. Place seam side down in rows of 10 and place over syrup mixture. Bake 25 minutes at 350* or until golden brown. Cool 5 minutes, then invert on waxed paper.

Roquefort Dressing

September


3/4 c. mayonnaise
1/4 c. blue cheese, crumbled
1/4 c. milk
1/8 t. white pepper
1 t. Worcestershire sauce
1/8 t. salt
1/8 t. garlic powder

Combine well and keep chilled. Makes 1 cup.

About lettuce:
Look for heads with unblemished leaves. The lettuce should have good green color and appear crisp and moist. The greener the lettuce, the healthier. Wash greens and dry well. Store in a vented plastic bag.
One pound of lettuce should yield 6 cups of shorn lettuce. Keep a supply of chilled salad bowls in the fridge.

Lo-Cal Cheese Dip

September 30. 1995

2 c. cottage cheese
2 t. instant beef bouillon
2 t. dry onion flakes
2 T.lemon juice

Whip until smooth. Makes 2 cups Perfect on baked potatoes!

California Steak Marinade

September 3, 1995


3 cloves garlic
1/4 c. olive oil
1 t. rosemary, crushed
1/2 t. dry mustard
2 t. soy sauce
1/4 c. wine vinegar
1/4 c. cooking sherry

Saute garlic in oil. Remove from heat and add remaining ingredients. Blend well. Makes enough to marinate 6 cube steaks.

I chose cube steaks and marinated 30 minutes and charcoaled outside and served these on toasted buns

Christmas Tree Bread

September 24, 1995


1 loaf frozen bread dough
1/3 c. oleo
1 t. cinnamon
thin white frosting
1/2 c. sliced almonds
maraschino cherries
1/3 c. sugar

Roll dough into a 12" x 18" rectangle/ Spread with oleo.sprinkle on cinnamon and sugar. Fold dough into a sailboat, over lapping the sails. Cut off bottom of boat to form a pinwheel later. Cut rows in sails and twist to form pine tree rows. Spray with a non stick spray. Make a pinwheel with the boat bottom to use as a trunk. Cover and let rise until double. Bake at 350* for 20 minutes. Frost while hot. Decorate with cherries and almonds.
White frosting: Mix 1 c. sifted powdered sugar, 6 t. milk, 1T. oleo and 1 t. vanilla

 The Spice Merchant in Wichita began selling Vietnamese cinnamon so I used it on this recipe, very very tasty. The cinnamon is a stronger and a little more oil but still use the same amount.

Chocolate Cream Cake

September 14, 1992


3/4 c. sugar
1/4 c. shortening
1 egg
1 c.all purpose flour
1 1.2 t. baking powder
1/2 t. salt
1/2 c. milk
1/2 t. vanilla
2 containers snack size vanilla pudding cups
Chocolate glaze

Cream oleo, sugar and shortening. Beat in egg. Combine dry ingredients and add alternately with milk and vanilla to creamed mixture. Pour into a greased 9" round cake pan. Bake 25 minutes at 350*. Let cool 10 minutes before removing from pan. Cool completely. Cut cake in half into 2 layers. Spread 1 one of the puddings on bottom half, top with cake top and top with the other pudding cup. Add glaze then chill Serves 8
Glaze: Blend and melt: 1/4 c. chocolate chips, 1 T. oleo,1/2 c. powdered sugar and 1 1/2 t. milk.


Sour Cream Cake

September 15, 1982


1 box chocolate cake mix (18.5oz.)
1/4 c. brown sugar, hard packed
3 eggs
1 c. water
1 pint sour cream
1/2 c. brown sugar

In bowl, mix together cake mix, 1/4 c. brown sugar, eggs, water and 1/2 c. of the sour cream. Mix on low
speed 30 seconds. Beat on medium sped 2 minutes. Pour into a greased 13" x 9" x 2" greased and floured pan. Bake 35 minutes at 350*. Mix remaining sour cream and brown sugar and pour on hot cake.

My younger sister, Donna Vittatoe, came for a cook out today and I fixed this and it was a hit!. My girls really enjoyed sitting on the grass while she read to them. I love you Donna

Brown Edge Sugar Cookies

September

1/2 c. oleo, softened
3/4 c. sugar
1 egg
1/2 t. vanilla
2 T. milk
1 1/4 c. all purpose flour
1/4 t. salt
1/4 t. baking powder

Cream oleo, then beat in sugar and continue creaming. Beat in egg and vanilla, stir in milk, then add flour, salt and baking powder. Mix well. Drop by teaspoonfuls on a greased cookie sheet 2" apart. Bake 10 minutes at 350*.

Working full time at The Spice Merchant, selling Avon on the side to make ends meet raising 3 teen girls.
I decided if we collected for Easter Seals, we could spend some time together and it worked! A cold September too. brrr!

Once Around Coffee Cake

September

2 1/4 c. all-purpose flour
1 t. salt
1 t. baking soda
1 t. cinnamon
1 c. molasses
1 egg
3/4 c. raisins
1 c. applesauce
Glaze: 1 T. lemon juice-3/4 c. powdered sugar mixed together

In a mixing bowl, combine dry ingredients. cut in oleo. Add molasses and applesauce. Beat well. Stir in raisins. Bake in a greased 8" square pan at 350* for 25 minutes. Drizzle glaze over top.

I can not remember a time when my Step Mother Jo Brown, did not have a baked treat to offer when visiting. If anyone reading this ever received a home made candy tray at Christmas time from Jo, you have experienced a true gift. ..I love you

Potato Patties

September 9, 1989


2. c. cold mashed potatoes
1 egg, beaten
1/4 c. onion, minced
1/4 c. celery, diced
salt / pepper
2. T. oleo, melted

In a medium bowl, combine potatoes, egg, onion, celery, and seasonings, mix well. Pour 1/3 c. of the batter into a press or use your hands, repeat 5 more times. In a large skillet, using oleo, brown patties 5 minutes on each side. Serves 6

Country Wheat Bread

September 17, 1989


1 pkg. dry yeast
1/4 c. warm water
2 T. sugar
1/4 c. oleo
1/2 c. water
1 t. salt
1/2 c. spicy mustard
2 c. bread flour
1 c. whole wheat flour

Dissolve yeast in warm water. Set aside. In a large bowl, combine oleo, water salt and mustard. Mix in yeast mixture. Knead, adding more flour as needed . Knead 10 minutes or until dough is very smooth. Place in a greased bowl, cover, let rise until doubled. Punch down. Shape loaf in a greased loaf pan. Cover and let rise until double. Brush with oleo and bake at 375* for 35 minutes.


Cow Poke Pizza

September 16, 1989


1 pkg. hot roll mix
1 lb. ground beef
1 15oz. can chili beans in sauce
1 clove garlic, minced
1 t. oregano
1/2 t. chipotle chili powder
2 c. grated American cheese
1 c. grated Romano cheese

Prepare dough according to package directions, omitting raising. Divide dough in half. On a lightly floured surface, roll each half into circles.. Place on greased pans.Press edges to stand slightly. In skillet, brown beef, drain. Add seasonings and slow simmer 5 minutes. Spread beans on dough, then top with beef, then cheeses. Bake at 425* for 20 minutes.

Raisin Cookie Bars

September 12, 1983


1 egg
2/3 c. sugar
1/3 c, oleo, melted
3/4 t. vanilla
1 c. all-purpose flour
1/2 t. baking powder
1/4 t. salt
2/3 c. raisins
cinnamon sugar

Beat sugar and egg together. Stir in oleo and vanilla. Add dry ingredients and mix well. Add raisins. Spread into a greased 9" pan. Sprinkle on cinnamon sugar. Bake 20 minutes at 350*. Makes 24 bars

Delicous Baked Chicken

September

3# roasting hen, cut up
3/4 c. buttermilk
2 t. instant chicken bouillon
1 t. leaf oregano
1 c. flour
1 T. paprika
1/4 c, oleo
sa;t / pepper
1/4 t. onion powder

Rinse chicken: pat dry with a  paper towel. In a small bowl, mix buttermilk, bouillon and oergano. Let stand 10 minutes. In a large bowl, pour mixture over chicken. Coat well. In a paper bag, shake chicken 2 pieces at a time in flour that has been seasoned with remaining spices. Place in a baking pan and drizzle with oleo.
Bake uncovered 1 hour at 350*

Instead of filling an ice tray with water, try lemonade and adding it to your iced tea.

Florentine Lasagna

September 28, 1990

1 lb. ground beef
1 box lasagna dinner mix
1 medium onion, chopped
1 10oz. pkg, frozen spinach, drained well, chopped
3/4 c. parmesan cheese, grated
3/4 c. mozzarella cheese, grated

Brown onion with ground beef as you prepare the lasagna according to box directions. After simmering, stir in spinach and cheeses. Cover and let cheese melt. Serves 5

1 c. butter
1 lb. marshmallows
4 qts. popped corn
1 c. salted peanuts
1 c. chocolate coated candies
1 c. gumdrops

In a large saucepan, melt butter and marshmallows over low heat. In a large deep bowl, mix remaining ingredients. Add butter mixture. Stir well. Pour into a greased tube or bundt pan or gelatin mold. Cool 1 hour before removing from pan. Cut into wedges.

Using up stray candy from Easter was an idea on how to create a goopy snack for everyone. Very pretty when done.
