2 lbs. ground beef
1 large onion, chopped
1 T. shortening
salt / pepper
1/2 t. garlic powder
1/2 t. cumin
1 10oz. cans mild enchilada sauce
12 flour tortillas
1/2 lb. cheddar cheese, grated
Brown beef and onions. Add seasonings and enchilada sauce. Simmer 30 minutes. Arrange alternate layers of tortillas, meat and cheese in a 9" x 13" pan. Bake 35 minutes at 350*

Another pretty day has passed. This morning I fixed you girls Malt o' meal and you hated it:( That was and still is my favorite. I start a new job at Callison's Restaurant tonight. Sorry about the sore butts, but you girls ran away from the baby sitters and we had to search for you. Planning a move to Oklahoma City, Ok. soon.
