Lemon Chiffon Pie

August 4, 1987

1 8" graham cracker pie crust
1 14oz. can sweetened condensed milk
1/3 c. lemon juice
yellow food color
3 egg whites
1/4 t. cream of tartar
assorted garnishes

In a medium mixing bowl, combine milk with 3 drops of food color. In a small mixing bowl, beat egg whites with cream of tartar until slight;y stiff. Gently fold into milk. Pour into crust and chill 3 1/2 hours or until set.

I also made omelets for dinner as not to waste the egg yolks.

Sweetened condensed milk;
Caramelizing in oven: Pour one can of sweetened milk into a 9" pie plate. Cover with foil and place in a shallow pan filled with hot water. Bake at 425* for 1 1/2 hours or until Carmel colored

Never heat unopened cans

In micro wave: Pour 1 can of sweetened milk into a 2 qt. glass bowl and cook on 50% power or medium heat 4 minutes, stirring every 2 minutes. or until smooth. Cook on 30% power or medium low 18 minutes. stirring every 2 minutes
