Barbecued Quesadilla

September 9, 1995

1/2 c. tomatoes, chopped
1/3 c. barbecue sauce, original flavor
2/3 c. green onion, chopped
1 T. red wine vinegar
1 squat can green chilies, diced
2 c. Monterey jack cheese, shredded
8 7" round flour tortillas

Combine tomatoes with bbq sauce, 1 T. of the green onion, vinegar and chilies. Add a dash of salt if desired.
Combine cheese with the remaining onions. For each quesadilla, sprinkle 2 T. of the sauce mixture over 1/2 c. cheese. Top with another tortilla., pressing gently. Fry in a skillet with a little oil until cheese is melted, turning only once. Cut each into 6 serving wedges. 10 servings.

There are two things that people worry about these days. One is that things may never get back to normal, and the other, that they may already have...Unknown
