Lemon Pie Deluxe

October 13, 1994


1 graham cracker crust
1 1/3 c. sugar
1/3 c. cornstarch
1/2 t. salt
1 1/2 c. hot water
1/3 c. lemon juice
2 eggs, separated
1 t. lemon peel, grated
1 t. vanilla
1 envelope unflavored gelatin
1/4 c. cold water
1 tub whipped topping
2 T. oleo

In saucepan, combine sugar, cornstarch and salt. stir in hot water and lemon juice. Over medium heat, stir until thickened and mixture mounds. Remove from heat. Add small amounts of egg yolk. Stir in 2 T. of oleo until melted, then add lemon peel and vanilla. Measure out 1 cup of mixture for glaze later on. Soften gelatin in cold water for 1 minute. Add gelatin to hot mixture, stirring until dissolved. Chill 30 minutes. Beat egg whites until stiff, then fold into mixture with 1 cup of the whipped topping. Pour into crust, spoon on glaze and chill overnight.

What a beautiful weekend. Saturday I took you to Callison's where I work and treated you to a chicken dinner. and you wasted it. Then I gave you each a dollar and took you to T G&Y's. Jody bought paper dolls, Debbie bought clay and Nancy bought crayons. So now...our tv has a big blob in the middle, oh well.
Last night we made popcorn balls together and a nice sit down meal and I can't wait until after bathtimes so I can tuck you. in.
